    Rescued & repurposed

    This TORI 2023 British Shochu has been made using traditional Japanese methods, using repurposed sake Kasu from the 2023 production of KANPAI’s ultra-premium TORI 'Bird' Junmai Daiginjo Sake.

    KANPAI only produce their TORI Junmai Daiginjo once a year as it’s made using highly polished Yamada Nishiki rice and yellow koji.

    This Shōchū is distilled from the kasu of Yamada Nishiki Rice with 35% polishing ratio.
