The ‘CO-LAB’ Series from 58 and CO is a collection of exclusive, limited edition spirits made with repurposed waste or byproduct.

The collaborations came from an organic connection with a like-minded brand, who needed a home for a waste or byproduct, to avoid it ending up in landfill.

Each product is a one-off, limited production as we can only create spirits with the byproducts we are given.

Olive Oil Vodka Spain 2022-23

Our Spain 2022-23 Olive Oil Vodka, made using evoo harvested across 2022 and 2023 by the Segura Gómez family in Sevilla, Spain.

This vodka is full and flavourful, with earthy and vegetal notes and a peppered, oily and sweet finish. Try it in a Tomato Martini or Bloody Mary.

Olive Oil Vodka Greece 2022

Our Greece 2022 Olive Oil Vodka uses extra virgin olive oil harvested in November 2022 by the Chrisoulas family in Crete.

The resulting vodka is clean and characterful with fresh floral and green notes with a creamy, bright and fresh finish. Perfect for an ice cold Olive Oil Martini!

British Bianco Vermouth

This limited-edition British Vermouth is made using repurposed excess wine and hand-picked botanicals.

A British take on a ‘Bianco’ style vermouth, with notes of bright lemon verbena, fresh orchard fruit and warming vanilla.

Made using a blend of sake Kasu, repurposed from various productions of KANPAI’s sake brewing across the 2020/21 brewing season.

Deep, savoury and umami with notes of meaty mushroom, brown rice and nutty richness.

Made using repurposed sake Kasu from the production of KANPAI’s ultra-premium TORI 'Bird' Junmai Daiginjo Sake.
