The Orchard

Fresh, crisp and gently spiced, The Orchard is an elegant apple gin cocktail made with 58 and CO Apple & Hibiscus Gin, green apple liqueur, homemade spiced apple syrup and Supasawa.

Bright green apple and botanical gin meet warming notes of ginger, cinnamon and vanilla, balanced with fresh acidity and finished with a splash of soda. Served in a Nick & Nora glass and garnished with a dehydrated poached apple slice, it is a sophisticated yet approachable cocktail to make at home.

The Orchard Cocktail Recipe

Serves: 1

Ingredients

First, make the spiced apple syrup and garnish

Thinly slice 2 Pink Lady apples using a mandolin.

In a saucepan, combine 500ml water with 500g sugar, a pinch of ginger, ½ teaspoon cinnamon and ½ a vanilla pod. Bring to the boil.

Carefully arrange the apple slices in the syrup, overlapping them around the pan in a ‘dauphinoise’ style. Bring the syrup back to the boil, then reduce the heat and simmer for approximately 20 minutes. Keep the apple slices submerged beneath the syrup using a bowl or plate.

Once the apples are poached, carefully remove the slices and place them in a dehydrator or oven at 70°C until crisp.

Strain the spiced apple syrup and allow it to cool completely.

Make the cocktail

Add the Apple & Hibiscus Gin, Briottet Manzana Verde, spiced apple syrup and Supasawa to a cocktail shaker.

Fill with ice and shake well.

Double strain into a chilled Nick & Nora glass, then top with soda water.

Garnish with a dehydrated poached apple slice.

Tips for Making The Orchard

  • Double strain. Double straining gives The Orchard a smooth, clean finish.
  • Keep the soda light. Just a splash is enough to lift the cocktail without diluting the apple and botanical flavours.
  • Don't throw away the poached apples. Dehydrate them until crisp for a beautiful edible garnish.
