Made by the Tsapatsaris family in Sparta, Peleponnese, Greece.
Innovation through collaboration
Each vintage uses ‘homeless’ single-estate extra virgin olive oil that couldn’t be used by Citizens of Soil. The production process is designed to preserve and celebrate the character and terroir of the original oil.

Rescuing 'homeless' oil
Excess extra virgin olive oil from Citizens of Soil.
Macerating with vodka
The oil was decanted and macerated in our Triple Distilled Vodka for 3 months.
Cold vacuum distilled
To preserve the olive oil’s subtle aromatics and flavour it was cold vacuum distilled in small batches.
Bottled by hand
Once we had our final yield, each bottle was filled and labelled by hand.
Citizens of Soil
Carmen and Citizens of Soil founder, Sarah Vachon, connected through a shared network of female founders championing sustainability.
As well as their incredible products, Carmen fell in love with the whole brand ethos. Their award-winning extra virgin olive oils elevate both the farmer and the table, coming directly from female producers who practise regenerative farming.
