Rescued & repurposed
KANPAI produce a variety of sake styles at their London brewery, with sake Kasu being the sole byproduct.
This KASU 2021 British Shōchū has been made using traditional Japanese methods, using repurposed sake Kasu from various productions of KANPAI’s sake brewing across the 2020/21 brewing season.



The perfect blend
This Shōchū is distilled from a kasu blend of Japanese Sakamai - Yamada Nishiki and Gohyakumangoku, 60% and 70% polishing ratios respectively, and yellow koji.
