Sloe Flip

A rich and indulgent spin on a classic Flip, created for 58 and CO by Jade Rose using our Double Sloe Gin.

There’s a bit of prep involved with the fig purée, so read the method carefully.

Ingredients

Serves 1

• 40ml 58 and CO Double Sloe Gin

• 10ml Parafante Fig Liqueur

• 10ml Luxardo Bitter Bianco

• 40ml Fig purée

• 1 Whole egg

• 5ml Lemon juice

• 10ml Double cream

• 4 dashes Walnut bitters

• 1 pinch of salt

Glassware

Large Coupe

Garnish

Fresh grated nutmeg

Method

FIG PUREE RECIPE:

Ingredients:

• 8 figs, cut into quarters

• 200g sugar 

• 200g water 

Makes approx 360 ml (enough for 9 serves)

Method:

1. Add all ingredients to a pan, steep for 5 minutes on medium heat then break down the figs with a spoon. Then continue stewing for 8 minutes on a low heat.

2. Remove from the heat and let it cool in the pan. 

3. Put the mix into a blender* (like a nutribullet) and blend, then fine strain through a sieve to remove seeds. (You may have to do this a few times.) 

4. Decant into a clean, sterilised bottle or jar and store in the fridge for up to a week. The puree can also be used on pancakes, tarts or other sweet treats!

*If you want a less intense fig flavour in your purée, remove half of the stewed figs before blending. Keep these sweet, sticky figs and use on top of avocado toast, with cottage cheese and a drizzle of good quality extra virgin olive oil. 

FOR THE COCKTAIL:

Add all ingredients to a shaker with ice, shake hard and fine strain into a large coupe. Grate some fresh nutmeg on top to garnish.
