ABOUT THE EVOO
Spain
This expression features a vibrant extra virgin olive oil from the López family, who have been cultivating olives for over 100 years in the biodiverse Sierra Subbética Natural Park in Córdoba, Spain.
Champions of nature-led farming, Andrea and Antonio protect native olive varieties including Picudo, while supporting biodiversity and the wider local community.
Their commitment to quality, sustainability and organic farming has earned international recognition, including Gold at the Ecotrama Awards.

Rescuing 'homeless' oil
Excess extra virgin olive oil from Citizens of Soil.
Macerating with vodka
The oil was decanted and macerated in our Triple Distilled Vodka for 3 months.
Cold vacuum distilled
To preserve the olive oil’s subtle aromatics and flavour it was cold vacuum distilled in small batches.
Bottled by hand
Once we had our final yield, each bottle was filled and labelled by hand.
