Impossibly fresh, perfectly complementing the grapefruit notes in our London Dry Gin.
Ingredients

- 50ml 58 and CO London Dry Gin
- 20ml Lime juice
- 20ml Grapefruit cordial (see method below)
- 5ml Honey or agave syrup
- Top with soda

Method
For the grapefruit cordial:
Add equal parts* grapefruit juice (fresh or freshly squeezed) and white sugar to a saucepan. Gently heat until the sugar melts then take off the heat and let cool. Do not simmer. You can pour the cooled cordial into a clean bottle and store for up to 2 weeks.
*e.g. 100ml juice : 100g sugar - you can make bigger or smaller batches depending on what you have available.
For the cocktail:
Add all ingredients except for the soda to a cocktail shaker with ice, shake until ice cold. Fill your spritz glass with ice (ideally crushed, but cubed is perfectly fine) and strain your cocktail in. Top with soda, stir and garnish with a big slice of fresh grapefruit. Cheers!
