A 58 and CO spin on a classic Pink Lady cocktail, using Apple & Hibiscus Pink Gin.

- 50ml 58 and CO Apple & Hibiscus Gin
- 25ml Lemon Juice
- 20ml Hibiscus Syrup*
- 3/4 pipette Miracle Foamer or 1 egg white
- A few drops of Angostura Bitter (to garnish)
*Hibiscus flowers in syrup are available online, or you can add equal parts dried hibiscus, sugar and water to a pan and simmer for 10-15 minutes to create a syrup.

Method
Add all of the ingredients to a cocktail with ice and shake hard until ice cold (wet shake). Strain out the ice and then shake again to build the foam (dry shake). Fine strain into a coupe glass and finish with a few drops of Angostura bitters.
