Bright, zesty, and irresistibly fragrant, this homemade Limoncello recipe is perfect for sipping in cocktails, sharing as a thoughtful gift, or keeping in the freezer for a refreshing treat anytime.
Ingredients
Makes 1.4 litres
- 700ml Vodka
- 6 unwaxed/organic large lemons

700ml water

500g caster sugar
Glassware
A sterilised Kilner jar (1.5L) and 2 sterilised glass bottles.
Method

Peel the lemons, making sure very little pith is attached to the skins, otherwise it will be bitter.

Add vodka to a large glass container and add the lemon peels. Seal the top and leave in a cool dark place for a week (or longer for a more intense flavour).

Once the infusion time has passed, strain peels from the alcohol into a vessel that can hold up to 1.5L.

On the hob, heat 700ml water until simmering and add the sugar. Stir for 3-5 minutes until the sugar has dissolved, then allow to cool for a few minutes.

Mix alcohol and sugar syrup together, stirring well. Bottle and leave to cool fully before putting in the fridge or freezer. Top tip: for a more intense lemon flavour add a fresh lemon peel to the liquid after bottling!
