Lemon Coastal Breeze

A lighter martini that tastes like a sip of the Mediterranean coast, with Olive Oil Vodka, Limoncello and a pinch of salt.

Ingredients

Serves 1

  • 35ml 58 and CO Olive Oil Vodka

  • 12.5ml Limoncello (store bought or make your own)

  • 12.5ml Giffard Poire Liqueur (an any pear liqueur)

  • A pinch of good sea salt, like Maldon or Cornish
  • Le Tribute Tonic Water (or any good Indian Tonic)

Method

FOR THE COCKTAIL:

  1. Add the Limoncello, Pear Liqueur, Olive Oil Vodka, and salt to a stirring tin.
  2. Fill the tin generously with ice.
  3. Stir for 20–30 seconds, until well chilled and a light frost forms on the outside of the tin.
  4. Single strain the cocktail into the chilled coupe.
  5. Gently top with tonic water.
  6. Express the oils from a lemon coin over the drink, then place the coin on top.
  7. Serve immediately.
