We’re proud to share that 58 and CO Shōchū has been named #15 in The Spirits Business Top 50 Innovative Spirit Launches of 2025 - a major recognition celebrating boundary-pushing spirits from around the world.
Inspired by Japan and crafted in London, our limited-edition shōchūs are a unique collaboration rooted in sustainability and craftsmanship. Working with British sake pioneers KANPAI, the distillery repurposed sake kasu - fermented rice solids left over from sake production - to create deeply characterful spirits with minimal waste.
The first release, Shōchū Kasu 2021, was made using a blend of sake kasu from KANPAI’s 2020/2021 brewing season. After receiving the kasu in 2021, we matured it before distilling at high pressure and heat, resulting in a low-yield yet highly concentrated spirit. It was then aged for three years in a neutral vessel and bottled at 25% ABV.
the second release, Shōchū Tori 2023, uses kasu from KANPAI’s ultra-premium Tori “Bird” Junmai Daiginjo Sake, showcasing an even more refined expression of this innovative approach.
This recognition highlights not just a spirit, but a shared philosophy - honouring Japanese tradition, embracing modern techniques, and finding beauty in reinvention.
