Meet Rae
Rae is the 450 litre Holstein still that sits proudly on display in the centre of the distillery. She is named after Carmen’s Mum, whose favourite tipple was gin. Rae Dunphy founded Canada’s first aromatherapy store in 1988 which is still going strong today. From a young age, Carmen recalls seeing her Mum blending essential oils and innovating with homeopathic remedies - a practice that would manifest itself years later with Carmen creating and distilling her first gin recipes.
Rae produces the majority of our liquid from our signature London Dry Gin, Apple & Hibiscus Gin and Triple Distilled Vodka.

Florence
Florence Nightingale was an English social reformer, statistician and founder of modern nursing. Coming to prominence while serving during the Crimean War, she significantly reduced death rates by improving hygiene and living standards.
Amelia
Amelia Earhart was an American aviation pioneer and writer, best known for being the first female aviator to fly solo across the Atlantic Ocean. She set many records and was one of the first aviators to promote commercial air travel.
Jane
Jane Austen was an English novelist born in the 18th Century. Known for her use of social commentary, realism and irony, her works are in implicit critique of the British landed gentry at the time and have rarely been out of print since.
Diana
Diana, Princess of Wales, was an international icon known for her activism - particularly for changing social attitudes towards and the acceptance of AIDS patients, and for the removal of landmines with the British Red Cross.
Rosa
Honoured by the United States Congress as “the first lady of civil rights”, Rosa Parks was an American activist in the civil rights movement best known for her pivotal role in the Montgomery bus boycott.
Ada
Ada Lovelace was an English mathematician and writer, considered to be the first computer programmer. She realised that the computer could follow a series of simple instructions - a program - to perform a complex calculation.
Maya
Maya Angelou was an American memoirist, poet, and civil rights activist. She published seven autobiographies, three books of essays, several books of poetry, and is credited with a list of plays, movies, and television shows spanning over 50 years.
Marie
Marie Curie was a physicist and chemist who conducted pioneering research on radioactivity. She was the first woman to win a Nobel Prize, the first person to win a Nobel Prize twice, and the only person to win a Nobel Prize in two scientific fields.
Emmeline
Emmeline Pankhurst was a British political activist who organised the UK suffragette movement and helped women win the right to vote.
Family matters
Behind the scenes, you’ll find the 60 litre and 10 litre stills who produce smaller runs of bespoke liquid for us and our white label customers. Head Distiller, Ben, named these after the important women in his life; his wife, Nan, Mum and Mother-in-law - (left to right) Charlotte, Jan, Karen and Pat.
The newest member
Last but certainly not least is Bunnie, the Rotavap, named in honour of our distiller Siobhan’s Mum. She produces everything weird and wonderful such as our extra special limited edition spirits and delicate distillates, most famously our Olive Oil Vodka.
