Rooted in a shared respect for provenance and ethical production, this collaboration brings together Citizens of Soil and 58 and CO to give exceptional ingredients a second life.
Each expression of Olive Oil Vodka uses “homeless” single-estate extra virgin olive oil that could not be used by Citizens of Soil, rescued and repurposed to preserve its character and terroir.
Cold vacuum distilled with 58 and CO’s award-winning Triple Distilled British Vodka, the result is a clean and characterful Olive Oil Vodka.
ABOUT THE EVOO
South Africa
From the Breede River Valley, this limited-release extra virgin olive oil marks Citizens of Soil’s first harvest from the southern hemisphere. Early-picked and produced in small batches, it is intensely aromatic, boldly peppery, and high in polyphenols.
Sourced from the award-winning producers behind the Rio Largo estate in the Western Cape, the oil is sustainably farmed, hand-harvested, and milled with precision to capture the character of its terroir.
Part of COS's Extra Rare collection, we were lucky enough to rescue some liquid from their June 2024 harvest for this expression of Olive Oil Vodka.

Rescuing 'homeless' oil
Excess extra virgin olive oil from Citizens of Soil.
Macerating with vodka
The oil was decanted and macerated in our Triple Distilled Vodka for 3 months.
Cold vacuum distilled
To preserve the olive oil’s subtle aromatics and flavour it was cold vacuum distilled in small batches.
Bottled by hand
Once we had our final yield, each bottle was filled and labelled by hand.
