It has earthy and vegetal notes with a peppered, oily and sweet finish. To really showcase its flavour and clean complexity, this stunning spirit can be served as an ice-cold Olive Oil Dirty Martini or in a Bloody Mary.

Making Olive Oil Vodka

Rescuing 'homeless' oil

Excess extra virgin olive oil from Citizens of Soil's Spanish harvests in 2022 and 2023.

Macerating with vodka

The oil was decanted and macerated in our Triple Distilled Vodka for 3 months.

Cold vacuum distilled

To preserve the olive oil’s subtle aromatics and flavour it was cold vacuum distilled in small batches.

Bottled by hand

Once we had our final yield, each bottle was filled and labelled by hand.

Citizens of Soil

Carmen and Citizens of Soil founder, Sarah Vachon, connected through a shared network of female founders championing sustainability.
